Caramelize the Onions
I really should have done a separate post on this, because I use caramelized onions on almost EVERYTHING; pizza, omelets, pasta dishes, sandwiches, it doesn't matter. Just caramelize those onions and put them in whatever dish your working on for pete's sake. Or just eat them out of the pan. I may or may not have done this myself...
Melt Butter in saucepan (substitute butter with olive oil for vegan recipe) over medium heat. Add onion slices and sauté for 10-15 min. Once onions become soft, add 1-2 Tablespoons of sugar and cook on low heat until light golden brown.
Grill the eggplant
I originally learned to grill eggplant from the good folks over at Simply Recipes.
Begin by slicing eggplant into 3/4 inch rounds and placing on a paper towel.
Grill each side of eggplant on medium-high heat for about 5 min. (The truth is, I know very little about grilling. Our grill only tends to work 50% of the time. I find when it does work, the food tastes good).
Assemble the Sandwich
Spread hummus onto sandwich roll, place grilled eggplant, caramelized onions, feta cheese, thick juicy tomato slices and romaine lettuce on top. Eat.
I paired our sandwiches with a pasta salad and it made for a lovely father's day lunch. I wish my Dad lived closer so I cold have made it for him. He is the one who taught me to caramelize onions, after all, and from whom I learned much of what I know about good cooking.
