i'm in love with a cookie

How should I put this? I'm in love with a cookie. I adapted the following recipe from one found on one of my favorite food blogs, simply recipes. I made some healthy changes to the Pumpkin Cookie recipe I found there, so I shall share it here so you can fall in love too...

Ingredients
3/4 C. butter at room temperature
1/4 C. applesauce
1/2 C. packed brown sugar
1/4 C. granulated sugar
1/4 C. honey
1 C. pumpkin puree (my best batch ever was the one pictured above, made with the pumpkin from my dear friend Rachel's garden. Canned pumpkin would also work though.)
1 large egg
1 tsp. vanilla extract
1 C. whole wheat flour
1 C. unbleached white flour
1 1/3 C. quick or old-fashioned cooking oats
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg

Method
-Preheat oven to 375 degrees.
-Beat butter, applesauce, honey, and sugar together until fluffy.
-Add the egg, vanilla, and pumpkin puree- beat another 3 minutes.
-In a separate bowl, combine the dry ingredients.
-Slowly add mixture to the wet ingredients, until well combined.
-Drop spoonfuls onto cookie sheets and bake 10-12 min. Cool on tray for a minute and then transfer to rack.
